Alltech® Café Citadelle

Alltech® Café Citadelle is a "cup of hope" for Haiti. After the devastating 2010 earthquake in Haiti, Alltech founder Dr. Pearse Lyons aimed to create a sustainable enterprise there with a local gem: the country’s 100 percent mountain-grown, organic, Fair Trade Certified™ Arabica coffee.

We market and sell these coffee beans as Café Citadelle, and use them in brewing our Kentucky Bourbon Barrel Stout®. All profits from sales of Café Citadelle go directly back to Haiti, where they are reinvested in two primary schools in northern Haiti.

Alltech Lexington Brewing & Distilling Co.

In 1999, when the former Lexington Brewing Company in downtown Lexington was closing its doors, Dr. Pearse Lyons purchased it and resurrected the brewing and distilling tradition of Lexington that dates back to 1794. Today, Alltech Lexington Brewing & Distilling Co. is a producer of award-winning beers and spirits, including its flagship brew, Kentucky Bourbon Barrel Ale®. It is also one of the few sites in the world to house both distilling and brewing operations. In 2012, the company became part of the famous Kentucky Bourbon Trail®  experience when it opened Town Branch Distillery, which welcomes 45,000 visitors each year from across the globe.

Pearse Lyons Distillery at St. James

A rich family history, a personal passion for brewing and distilling, and an entrepreneurial spirit have led to the creation of one of Dublin’s new boutique Irish Whiskey experiences, Pearse Lyons Distillery at St. James.

Founded by Dr. Pearse and Mrs. Deirdre Lyons, the distillery is history in the remaking. Pearse Lyons hails from five generations of coopers, who supplied barrels to many of Dublin’s distilleries. He holds a Ph.D. in yeast fermentation and was the first Irishman to achieve a formal degree in brewing and distilling from the British School of Malting and Brewing. While at university, he interned at both the Guinness and Harp Lager breweries and later worked as a biochemist for Irish Distillers.

In keeping with the boutique nature of Pearse Lyons Distillery, tours are small in size so that visitors can enjoy a more personal experience. Tours are hosted by a team of friendly storyteller guides who intrigue visitors with the historic landmark's spellbinding tales dating back as far as the 12th century.
